An Italian inspired dish of oven roasted aubergine layered with fresh tomato sauce, mozzarella and parmesan cheese. The mozzarella stringly ties the dish together as you try to serve it.

Bake in a preheated oven at 190Degrees Celsius for 30 minutes until bubling and browned on the top.
